Well I can’t pretend that all the digging and wheelbarrowing I’ve done lately hasn’t taken its toll. My back has been in agony! I’ve been lying on floors and leaning on hot water bottles and I’ve still got the other half of the polytunnel to dig!
I decided to take it easy over the weekend and do some baking.I took some requests and made some dark chocolate chips muffins, a chocolate sponge, an apple pie and a few jam tarts. All vegan. The apple pie used up some of my stewed apples that I have in the freezer. We had a glut of cooking apples in the autumn, so I peeled, chopped and stewed them with sugar and filled the freezer. With some left over bits of pastry I made a handful of jam tarts, using my damson and apple jelly. They went very quickly!
